After cutting, scoop out the flesh-covered seeds and separate with your hands.
The rich pulp makes an ideal moist cake or, by pressing the flesh and extracting the juice, can be used in a smoothie or amazingly flavoured cocktail. The almost-white coloured flesh has a consistency similar to a ripe pear matched with a subtle, creamy, custard-like taste.
A custard apple is ripe if it gives slightly when gently pressed. Custard apples can be bought ready to eat, or still hard to the touch.
If so, allow to ripen over several days before eating. To speed ripening, put the fruit into a brown paper bag with a banana and leave it on the kitchen bench. Custard apples are grown along the sub-tropical and tropical coast of the eastern seaboard of Australia, from the Atherton Tablelands in north Queensland to Lismore in northern NSW. The largest growing and production area is the Sunshine Coast in south-east Queensland while the Yeppoon area in central Queensland lays claim to producing the first fruit of the season.
Custard apples are a nutritious way to finish a meal, with 100g providing 110 per cent of the recommended daily intake of vitamin C. They are low GI and filled with protein, fibre, minerals and vitamins.
